We visited Tom Wood Brewery near Melton Ross on a very wet and cold evening in May. Tom welcomed us and after telling us a bit about the company and how he had founded it, he took us up to the granary where the malt and hops are stored. We tasted the barley malt and it tasted like Horlicks. The hops are from Kent and Worcestershire, the malting barley is grown locally on the Wolds of Lincolnshire and Yorkshire and is malted at Castleford and the water is from a bore hole close by on Melton High Wood farm, sunk deep into the chalk. We then went into the processing plant and saw where the mashing and fermentation takes place. The beer is not bottled on site but is sent away to be bottled and the rest is put into barrels. The waste grain is taken to Cotehill Farm to feed to the cattle. (That's why the cheese tastes so good!) We sampled a couple of beers before we departed.
